Ingredients6 oz. semi-sweet dark chocolate
1/3 c. evaporated skim milk
3 Tbsp. apple juice
1/4 c. powdered sugar or Dutch cocoa
Chop chocolate in fine pieces.
In a small saucepan, heat milk and apple juice until simmering.
Pour over chocolate and let sit for 5 mins.
Cover and refrigerate overnight.
Portion chocolate using a scant 1 Tbsp. measure into 1-inch round balls and roll in palm of hand.
Coat with powdered sugar or cocoa and place on a sheet pan 1-inch apart.
Refrigerate until ready to serve.
Truffles may also be rolled in chopped nuts, however the nutritional information will be higher in calories, fat, and protein.
