Carol Vignali's Cucumber & Tomato Salad

1 medium cucumber
2-3 medium ripe tomatoes, cut into large chunks
1 small onion, chopped
1 large green pepper, sliced
Fresh herbs (your choice)
Italian dressing
Balsamic vinegar to taste


Take one medium cucumber and cut into cubes. Add 2-3 medium ripe tomatoes that have been cut into large chunks, a chopped onion, and a large sliced green pepper. Combine with a blend of Italian dressing, balsamic vinegar and your choice of fresh herbs to complete the salad. This is a great low-fat, low-carb side dish to add to any meal.
