Winter Harvest Salad

Ingredients1 green apple peeled, poached and sliced
2 bags salad mix or baby greens
1/4 c. chopped roasted almonds
1/2 c. dried cranberries
1/2 oz. crumbled goat or blue cheese (optional)
Raspberry vinaigrette (bottled)
1 c. fresh raspberries
1/4 c. lime juice
1/4 c. raspberry vinegar
salt and pepper
1/2 c. water
In a blender, mix raspberries, lime juice, vinegar, salt, pepper, and water.
Puree, strain, and set aside.
In a large bowl, mix apples, salad greens, almonds, and cranberries.
Toss with 1 cup of vinaigrette and serve.
